Mary's Mason Jar Cheesecake


Mary made the most amazing Mason Jar Cheesecakes for the Painting Party at the Barn.  Delicious. I am guilty of eating two. She was grateful enough to want to share her easy-peasy recipe with all of you.  It is SO easy it takes less than 30 minutes to make! NO BAKING REQUIRED!

Grocery List:
  • Graham cracker crust (graham crackers mixed with sugar & butter)
  • Block of softened cream cheese
  • 1 can sweetened condensed milk
  • Fresh lemon juice
  • Vanilla
  • Baggie
  • Topping of your choice: can of cherries, fresh strawberries or raspberries...
  • Mason Jars (8)

First, make your graham cracker crust.  Crush 1 1/2 cups of graham crackers finely with a food processor
or rolling pin.  Add 1/3 cup of sugar and 6 tbsp of softened butter. Mix together in a bowl. Set aside. (If you want to cheat and just make a pie, use a 9 inch pre-made pie crust).


Collect your mason jars, it will take about 8 jars.  Divide crust evenly into all jars.  Push down with spoon or fingers, however it is easiest for you! Set the jars in the fridge while you are making the filling.


Now you want to mix your softened cream cheese, sweetened condensed milk, 1/3 cup of fresh lemon juice, and 1 tsp of vanilla together.  Mix until smooth.

Take the jars out of the fridge. Scoop the mixture into a large baggie and cut the corner off one end (piping bags work too). Pipe the filling into the jars. Tap the bottoms gently against your counter to get the filling to settle evenly in the jar. 

Add your topping.  You could use any pie filling, or fresh berries.  Mary made our cheesecakes with cherries (my favorite). Yummmy!  She just spooned cherry pie filling onto the top.  Refrigerate for at least 5 hours before serving. Since we were in the barn, she kept ours cold by placing on ice in an adorable old galvanized bucket. Adorable.
